Flaming Cheese

Ladies and gentlemen, flaming cheese. I will hold for applause. But wait, it gets even better. This Halloumi cheese from Cyprus has been flambeed in brandy and topped with a few drops of lemon juice to balance all the bold flavors. Salty, buttery, rich, with a fruity caramelized essence, it rendered words inadequate. Warm pita bread triangles -- delicious in their own right --  acted as a soft pillow guiding the cheese to my watering mouth. Everything about this dish was right on the money, except that I craved about eight more servings after we finished the first one.
