Louisiana Cajun Gator Rolls
That's right ladies and gentlemen, you too can chow down on one of nature's oldest, creepiest lizards. Don't be frightened away by this exotic Everglades meat -- after a bite, you'll be willing to dive off the side of an air boat to wrestle this recipe from a gator's mouth. Included with the crispy, spicy rolls is a pool of sweet balsamic reduction for dipping. It pours as slow as molasses, is as black as tar and is the perfect balance of sweetness to contrast the smoky and spicy filling of the rolls. They are similar to an eggroll in texture and shape, but are larger and filled with alligator meat, andouille sausage, peppers, onion and tasty tasty spices. Believe this "po' boy" when I say the amount of spicy heat is just right. Your taste buds will tingle and you will be glad you went out on a limb.
