The servers
When the workers aren't taking orders, making orders or calling up orders, they're in a contsant state of motion — busing tables, straightening chairs, tidying the condiment station, answering questions, retrieving additional side items and keeping the whole joint running smoothly. As a result, the place is neat as a pin and tables are turned over very quickly (even though I never felt rushed and saw people hunkered down for a good chunk of time).
